- Poner a fuego medio alto, mientras se va haciendo, pelar y lavar verduras. La patata y la zanahoria cortarla en trozos. El puerro apio dejar tal cual, si el puerro es muy grande cortar en dos mitades
- Cuando salga espuma hay que ir espumado y retirándola (yo uso un bol con agua, quito la espuma con la espumadera y la voy enjuagando en el bol con agua limpia
- Una vez retirada la espuma, añadir las verduras. Cerrar la olla y cuando empiece a sonar, bajar fuego (yo lo pongo en el 6, y mi máximo son 9).
- Contar unos 35 minutos. Una vez transcurridos, y cuando se pueda abrir olla que se haya quitado toda la presión, retirar las verduras y añadir más agua para poder sacar más caldo. Poner a fuego 5-6 y dejar que se vaya haciendo un poco más.
- Retirar todos los ingredientes que queden y colar el caldo. La carne sobrante y el tocino se puede usar para la pringá
- Añadir caldo a otra olla y cuando esté hirviendo añadir arroz, fideos o lo que más os guste.
