- Echar las acelgas lavadas y cortadas, y cubrir con agua.
Añadir sal y colorante y llevar a ebullición. Dejar hervir 15-20 minutos a fuego lento. - Añadir el arroz y los caracoles, rectificar de sal en caso necesario, y dejar hervir 20 minutos a fuego lento-medio hasta que esté el arroz en su punto.
