  10. 250 gr mantequilla en pomada
  11. 6 cucharadas azúcar glass
  12. 4 cucharadas café soluble
  13. 100 ml agua
  14. 1/2 copa brandy
  15. 2 yemas de huevo

  1. Pesamos y tamizamos la harina.
    Pesamos los huevos.
    Ponemos en un cazo el agua, la leche, sal y azúcar y llevamos a hervir.
  2. Cuando rompa a hervir, retira el cazo del fuego y añadimos la harina de golpe.
    Con una cuchara de madera vomemos con fuerza hasta que la masa se suelte de las paredes.
    Dejamos unos minutos que pierda temperatura y añadimos los huevos de uno en uno, no poner el siguiente hasta que no esté integrado.
  3. Pasa la masa a una manga con boquilla rizada para formar los palos sobre una bandeja de horno con papel cebolla.
    Dejamos separación entre ellos porque van a crecer.
    Horno precalentado a 210º.
    Pon la bandeja en la parte baja y cuece por unos 25 minutos, dejalos dentro del horno con la puerta entre abierta 10 minutos más para que se sequen y dejamos enfriar sobre una rejilla.
  4. Para rellenar he optado por una deliciosa crema de moka, Vamos a calentar el agua con el café y una cucharada de azúcar y lo vamos a dejar reducir hasta que nos quede como un sirope.
    Lo dejaremos enfriar.
  5. Vamos a batir las yemas con el azúcar y vamos añadiendo trozos de mantequilla hasta completar toda, añadimos el café, mezclamos bien y por último el brandy.
    Llevamos a una manga y a la nevera antes de usar.
    Cortamos los palos de masa choux solo por una parte y rellenamos con la crema y listos para disfrutar, feliz Día del Padre, Tevasapuntar.
